Squash Casserole

2# Cooke and drained squash

Small carrotes grated

small onion chopped fine
1
can cream of mushroom or chicken soup
1/4c
melted butter
1
8oz container of sour cream
1/4c
chopped pimentos (optional)

8ozs pack of Pepperidge Farm Cornbread Stuffing Mix

1. Combine the butter and stuffing mix

Place 1/2 of the mixture in a greased casserole dish - save the other half
3.
Combine all other ingredients and salt/pepper to taste - pour over the top of the stuffing mix
4.
top with the remining stuffing mixture
5.
Bake at 350 degrees for 30 minutes or until bubbly
6.
Cover with foil if browning too quickly
