Peach Chicken

Yield: 4 Servings

4 - Boneless Chicken Breasts
5 - Peaches (may use 1lb frozen or sliced)
1/2c - Sugar
2 Tbl - Lemon Juice
1/2c - Malibu Rum
1/4C - Brown Sugar
1C - Chicken Broth

1. Peel and slice peaches. Put them in a container with sugar, lemon juice and rum. Let the peaches marinate 1 hour or up to 1 day.
2. Lightly florou and season the chicken and sautee in large skillet in a small amount of vegetalbe oil until the chicken is browned. Remove the chicken and keep warm.
3. Place the peaces and juice into skillet, then add the brown sugar and broth - mix well.
4. add the browned chicken to the pan and simmer until chicken is done, tender and sauce has thickened. (stirring occasionally)
