
MISS FRAN'S SHRIMP and RICE
1 1/2 lb Shrimp peeled and deviened
1 Cup Worcestershire sauce plus extra to taste
3/4 lb Bacon
3 Cups White Rice - cooked
2 Tablespoons Butter
8 Green Onions - diced
2 Bell Peppers - diced
2 Cups Sliced Water chestnuts
1/4 Cup all Purpose Flour
1. Marinate shrimp in Worcestershire sauce for an hour or so.
2. Cook bacon in a large skillet until crisp, remove bacon and reserve. Leave approx.. half of bacon grease in pan. Reserve rest of bacon grease in case needed.
3. Add the butter to the skillet and cook onion and peppers on medium heat until soft, approx.. 5-7 min.
4. Add water chestnuts and cook an additional 5 minutes.
5. Drain shrimp and lightly dust wit flour.
6. Push onions, peppers and water chestnuts to sides of skillet and place shrimp in center. Cook shrimp on both sides till done. Add more bacon grease if needed.
7. When shrimp are done stir onion-pepper-water chestnut mixture into shrimp. Add more Worcestershire sauce if desired to taste.
8. Add cooked rice and stir. Heat until rice is hot.
9. Serve with crumbled bacon on top.
