
Skewered Beef Tenderloin
Ingredients:
1.5# Beef Tenderloin, Cut inot 1 1/2" cubes
3tbl - olive oil
8tbl - butter, melted (1 stick) divided
1tbl - chopped fresh thyme of 1/2 tsp dried
1tbl - dijon mustard
1/8tsp - red pepper flakes, salt and freshly ground pepper
6tbl - fresh lemon juice
1. Divide the beef cubes between 2 long skewers
2. Combine the oil, 4 tbl of the melted butter, thyme, mustard and red pepper flakes and mix well
3. brush over all sides of the beef cubes
4. season to taste with salt and pepper
5. grill for about 3 minutes per side, brushing with more of the oil mixture
6. combine the remaining melted butter with the lemon juice
7. heat quickly and pour over the skewered meat just before serving
