Catfish Stew

3# - Catfish fillets - cut into large pieces
2 - Onions, diced
6 - Strips of Fatback (Approx 3oz.)
1 large baking potato - diced
1c - Ketchup

1. Fry out the fatback and remove from pot.
2. Saute the onions in grease until clear.
3. Place the fish over the onions
4. Add water until covered.
5. Add the potatoes on top.
6. Add the salt and pepper to taste.
7. Cook until the fish is done.
8. Add the ketchup and stir gently
9. Serve over rice or grits.
