Grilled black tip shark loin
Ingredients
- 2 (8 oz) black tip shark loins
- 1 cup of olive oil
- 2 tablespoons of garlic
- small bunch of chopped parsley
- 1 tablespoon of diced shallots
- 1 teaspoon of dried thyme
- 1 tomato
- ½ cup of soft (unsalted) butter
- salt, pepper
- Tabasco, to taste
1) Marinade shark in olive oil, garlic, shallots, parsley, and thyme
(You may marinade 2-24 hours)
2) Grill shark on both sides until done
3) Slice tomato and dip into marinade then grill them
4) Mix butter, parsley, salt, pepper and Tabasco
5) Take tomato off the grill and plate them
6) Put sword on top of the tomatoes
7) Finish by topping the shark with the butter mixture
