Shrimp and Grits
Ingredients
- 8 oz bacon, diced
- 1 pound sausage, sliced
- 1 small onion, diced
- 1 red pepper, diced
- 1 green pepper, diced
- 2 tablespoons of minced garlic
- 2 shallots, diced
- 2 medium tomatoes, diced
- 2 pounds of shrimp peeled and deveined
- 1 cup of chicken stock
- cornstarch, as needed
- 2 teaspoons of Tabasco
- salt, pepper, granulated garlic, white pepper to taste
Cook the sausage until done and then add the bacon. Cook the bacon until most of the grease is rendered. Add onions, peppers, garlic, shallots, season and cook for 5-8 minutes. Add tomatoes with any juice from the tomatoes. Add shrimp and cook only 3-4 minutes (do not over cook!). Next, add the chicken stock and Tabasco. Simmer for 5 minutes and thicken slightly with cornstarch. Taste and adjust seasons. Follow the directions on the package for your grits. I would suggest, when making your grits, replace some or all the water with heavy cream or half/half. Then add shredded cheddar cheese to your grits. You may also use a combination of cheeses if you like.
