Grilled Rib Eye Steaks with Onions and Zucchini
Rib Eye
3t. Garlic Powder
3t. Dried Thyme
2t. Fresh Ground Black Pepper
11⁄2 t. Salt
11⁄2 t. Lemon Pepper
11⁄2 t. Red Pepper
11⁄2 t. Parsley Flakes
2T. Olive Oil
4ea. Thick Cut Rib Eye Steaks
METHOD: Mix spices together and rub onto steaks with olive oil. Allow steaks to sit at least 2 hours. Cook steaks on a hot grill 4-5 minutes a side for medium rare. Remove steaks and allow to rest while the vegetables are cooking.
Grilled Vegetables
2ea. Zucchini
2ea. Yellow Squash
1ea. Red Onion
2T. Olive Oil
Salt and Fresh Ground Black Pepper
MEHTOD: Slice vegetables in quarter inch slices. Rub with olive oil, salt and black pepper. Lay vegetables on the grill perpendicular to grates so the vegetables do not fall through. Cook until they start to color and become tender and flip and finish cooking. This goes well with sour cream and chive mashed potatoes.
