Pan Seared Grouper with Roasted Asparagus, Sour Cream and Chive Mashed
Potatoes with Creole Honey Mustard Sauce
Sour Cream and Chive Mashed Potatoes
7ea. Russet Potatoes
1c. Cream
1T. Sour Cream
2T. Fresh Chives
1T. Butter
Salt and Pepper as Needed
Method: Wash, peel, and quarter potatoes. Simmer potatoes until they are
tender. In a small sauce pot heat butter, cream, and sour cream until
warm. Drain potatoes and return to pot. With a wooden spoon mash and add
butter and cream mixture to achieve desired consistency. Season with
salt
and pepper.
Roasted Asparagus
2ea. Bunches of Asparagus
2T. Olive Oil
Salt and Freshly Ground Black Pepper
Method: Pre-heat oven to 350. Wash asparagus under cold water. Holding
the
asparagus bend and snap off the lower end of the vegetable and discard.
Dry the asparagus with paper towels. Put the asparagus in an oven safe
baking dish and drizzle with olive oil and season with salt and pepper.
Make sure that the spears are coated evenly. Roast in oven 15-20 until
the
asparagus is tender.
Creole Honey Mustard Sauce
3T. Minced Shallots
3T. Peppercorns Crushed
1T. Vegetable Oil
3⁄4 c. Dry White Wine
1⁄4 c. Dijon Mustard
3⁄4 c. Creole Mustard
1c. Mayonnaise
1c. Sour Cream
2T. Honey
Kosher Salt
Method: Sweat shallots and peppercorns in oil over low heat not allowing
them to brown. Add wine and reduce to 3⁄4 of its original volume. Allow to
cool. Mix remaining ingredients in a bowl and then add wine mixture.
Season to taste with salt and pepper.

Pan Seared Grouper
4 7-8oz. Grouper Filets
2T. Oil for searing
Salt and fresh pepper
Method: Pat grouper filets with paper towels. Season with salt and
pepper.
Heat a large sauté pan over high heat. Add oil. Once the oil is
shimmering
and is just starting to smoke with tongs gently add grouper filets to
the
pan skin side up. Sear until they are a deep golden brown and then flip
and repeat process. If the filets are thin they can finish cooking on
the
stove. If they are over and inch thick they can be put into a 350 degree
oven for 3-5 minutes or until they are opaque in the center.
