Mahi-Mahi w/sherry-tomato sauce
Ingredients
- 3-4 mahi-mahi filets, boneless about 7-8 ounces each
- 2 tablespoons of diced shallots
- 1 cup of diced tomatoes (one large tomato)
- 1 _ cups of dry sherry
- 2 tablespoons of minced garlic
- 4 tablespoons of whole, unsalted butter
- 2 tablespoons of fresh chopped parsley
- Oil olive as needed
- Salt, white pepper, granulated garlic
In a mixing bowl coat mahi-mahi with olive oil and seasonings. You may cook the fish on a grill (about 7-10 minutes) or in the oven (350 degrees about 10 minutes). Heat some oil olive in a sauce pan and add shallots and tomatoes, cook about 4 minutes. Add sherry and garlic, cook about 10 minutes. Add parsley and season. Add butter, one tablespoon at a time until completely incorporated. Fish will be finished when it becomes a little flaky.
