Crabmeat stuffed filet mignon
Ingredients
1) Take 8 oz tenderloin and butterfly (make a cut down the middle about 3/4 of the way through)
2) Fill the filet with crabmeat stuffing and close the filet, making sure the crabmeat stays inside the filet
3) Coat the filet with oil and season
4) Grill the filet about 2 minutes on each side and finish in the oven (350 F) for about 5-10 minutes, depending on the how you like your steak prepared
Crabmeat stuffing
Ingredient
- 1 pound of crabmeat
- 1 cup of mayonnaise
- ½ cup of chopped onions
- ½ cup of chopped peppers (various colors)
- 2 tablespoons of chopped garlic
- 1 tablespoon of old bay seasoning
- salt and pepper, ½ teaspoon of each
- bread crumbs
- Lemon juice 1-2 teaspoons (optional)
- Yields 4-6 stuffed filets
1) Mix all ingredients together in mixing bowl
2) Add bread crumbs if mixture is not tight enough
3) Add lemon juice if using as a seafood stuffing
