Crabmeat cream sauce
Ingredients
- 1 quart of heavy cream
- 2 shallots, diced
- 1 small onion, diced
- 2 tablespoons of diced garlic
- 1 red pepper, diced (or roasted red pepper, diced)
- ½ pound of lump crabmeat
- ¼ pound butter, unsalted (cubed in pieces)
- olive oil, as needed
- 1 tablespoon of Tabasco sauce
- salt and pepper, to taste
Sauté shallots and onions for 2-3 minutes in a small amount of olive oil. Next, add garlic and sauté for 2 more minutes. Add red peppers and sauté for 2 more minutes. Add heavy cream and simmer for 10-15 minutes. Add crabmeat and simmer for 3 minutes. Season with Tabasco sauce, salt and pepper. Add butter to thicken slightly.
