Cowpea Casserole        

Ingredients:
         1 Cup Cowpeas ( Serves 4 )
         2 Cups Cooked Carolina Plantation Rice
         1lb. Smoked Sausage
         2 Medium Onions
         3 Celery Stalks
         1 Green Pepper
         2 to 3 Whole Tomatoes
         16 oz. Mozarella Cheese
        

Cooking Cowpeas
         Rinse peas throughly, soak 3 to 4 hours, drain.  Cover peas with water (at least 3
         cups of water), add smoked ham hock, slice of country ham or bacon. Salt and
         pepper (preferably red pepper) to taste, add 1 cube ham bullion.  Bring to boil,
         cover and simmer for one hour or until peas are tender.
        

Cowpea Casserole
         Brown sausage - sautee garlic and vegetables until tender.  Add cooked rice to
         casserole dish, layer cowpeas over rice, then layer sliced tomatoes and smoked
         sausage, then sauteed vegetables, last layer mozarella cheese over dish.  Add
         liquid from cowpeas over mixture to keep casserole moist ( secret for great
         casseroles - keep moist ).  Bake at 350 degrees for 45 minutes.
