Peggy's Peach Cobbler
Ingredients
- 3 cups sugar
- 12 Tablespoons cornstarch
- 1 cup water
- 3 teaspoons ground cinnamon
- 4 (29 oz) cans peach slices
- 1 teaspoon vanilla
Cinnamon swirl topping
- 4 ½ cups all purpose flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1 ½ cups packed brown sugar
- 1 cup margarine
- 2 eggs, slightly beaten
- ¼ cup buttermilk
Topping for rolled out dough
- ½ cup melted butter
- 1 ½ cups brown sugar
- 5 teaspoons ground cinnamon
Lemon glaze
- 1 cup sifted confections sugar
- 2 Tablespoons lemon juice
- 1 teaspoon vanilla
- 4 Tablespoons water
- 2 drops yellow food coloring
Directions
1) Drain peaches and save juice (set peaches aside). Combine sugar, cinnamon, cornstarch, water, vanilla and peach juice in large sauce pan. Cook over medium heat till thickened about 20 minutes. Stir in drained peaches. Set aside.
2) Mix flour with baking powder and salt in a large bowl. Add brown sugar. Cut in margarine with fork until mixture is fine. Combine egg and buttermilk. Add to flour mixture. Mix until moistened, adding a few drops of buttermilk if needed. Roll out dough onto a floured surface, to a 14 x 12 inch rectangle. Brush with melted butter. Combine brown sugar and cinnamon. Sprinkle ½ of mixture over dough. Roll up dough, starting at long end. Cut into ¾ inch slices, place slices in bottom of an 11 3/4" x 9 3/8" x 2" greased pan. Put in 400 degree oven and bake about 15 minutes till brown. Pour peaches and peach juice over top of cinnamon swirls and repeat cinnamon swirls on top of cobbler. Put entire pan in 400 degree oven and bake for 25-30 minutes.
3) While cobbler is still warm and out of oven, combine ingredients of lemon glaze and drizzle over top of cobbler.
