Black Bean Salsa
Ingredients
- 1 Small bag of dried black beans
- 1/4 cup of chopped cilantro
- 1/4 cup of chopped basil
- 1/4 cup of chopped scallions
- 2 green peppers, diced
- 1 red pepper, diced
- 1 small white onion, diced
- 2 t. garlic
- Soak black beans in water over night
- Cook black beans until tender (use 3 times water to beans ratio) and then strain the beans
- Combine all ingredients and stir with a spoon
- Season with salt & pepper
- You may also add lime or lemon juice; Tobasco or old bay (make sure it's a small amount)
