Bacon wrapped scallops with soy sauce
Ingredients
- 4 whole mushrooms (washed)
- 1 red pepper sliced into 2 x 2 pieces
- 1 zucchini sliced into 2 inch pieces
- 1 squash sliced into 2 inch pieces
- 8 slices of bacon
- 8 large scallops
- 1 cup of olive oil
- 1/3 cup of season mixture of basil, oregano, thyme, tarragon
- 2 tablespoons of garlic, minced
- soy sauce, as needed
Skewer the mushrooms, red peppers, zucchini and squash (using two skewers). Wrap each scallop with a strip of bacon and then skewer the scallops between two skewers. Pour half the olive oil over the vegetables and half over the scallops. Then season both with mixture. Add one tablespoon of garlic to each. Let marinate for 30 minutes and grill on medium heat until done. If the heat is not too hot then when the bacon is fully cooked the scallops will be finished cooking as well. When the scallops are close to done then coat them with soy sauce.
